Easy Banana Bread Recipe

Yesterday we had a great time with our friends from Canada. My hubby BBQed, and I made for dessert  his two favorite recipes banana bread and chilled cheesecake. I love to eat these sweet treats as much as I love to make them for their simplicity. This recipe is specially posted for my mommy, I know she wanted to make it, so here it is mom:

Banana Bread

My sister in law told me that:" this banana bread is exactly like the one they sell at Peet's coffee, except that this one tastes even better..." It seems I am quoting her, but that's what she said.
Cooking time 45-50 min 350F
2 cups flour
1 tsp baking soda
1/4 tsp salt
1/2 butter
3/4 cup of sugar
2 eggs
3  ripe bananas*
1 tsp vanilla
2 handfuls  of  semisweet chocolate chips (optional) also raisins or pecans

How to:

         Mix the dry ingredients in a big bowl: flour, baking soda & salt.
         Soften the butter and mix it with the sugar and add to the dry ingredients.

        Smash the bananas in a medium bowl, add previously whisk eggs and vanilla.

      Fold the wet mixture into the dry ingredients mix with a spatula or spoon, do not use an electric mixer, just fold it only until ingredients are blended.  Mixing the ingredients too much will make the banana brad turn dry. If you'd like add a handful of chocolate chips while folding the mix together at this time, nuts  or raisins.
      Pour the final mix into a 8" greased pan, bake at 350f for about 40 to 50 minutes, or until golden brown. Let it cool off  before serving.

*tips on bananas: If your bananas are not ripe, just smash them and let them sit for 10 or 15 minutes, they will oxidize and work as good as the ripe ones.
I cook the banana for 40 minutes and then turn the oven off and let the banana inside for other ten minutes, it always turns out moist this way. Do not overcook.
