Mexican Dip

My hubby and I are newlyweds - a year next month - and the hardest thing for me is  to cook for only two people, or to cook at all. Usually all the meals I make are big and I end up doing what I never wanted: throwing food away. So I am beginning to manage how to cook for two people that don’t eat a lot. This dish always works for us, small portions and vegetables, it's just what we need.



This recipe is a variant of one of my aunt’s,but I reduced it for only two people that do not eat a lot (however all the ingredients quantities can be multiply to make  as much servings as you'd like), I changed some ingredients and add some more. It turned into a pretty healthy recipe for me, with lots of vegetables and natural spices.

The famous Mexican Dip
½ pound of ground beef
½ cup of rice
1 red pepper (I used half yellow pepper half red pepper to add color)
1 small regular onion
1 green onion
2 ripe juicy tomatoes                                                                                                                                                                                                                                                                                                                                                                                                                                                                                
1/2 pound of cheese (or as much you'l like to shred on top
1 tbsp of chopped parsley
1 tbsp of lemon
1 clove of garlic
Salt, Pepper, Chili pepper Powder (at your taste)
Some sour cream (if you like)
Nacho chips

1 Crumble the ground beef in a medium skillet. Add salt, pepper, chili powder and chopped garlic.Cook over medium heat until it is evenly brown, and set it aside.
2 chopped the regular onion, pepper, and one tomato in small squares. Cook over medium heat until the onion looks goldish transparent, add red pepper and tomato and cook for couple of minutes until vegetables soften.  It will have a sauce consistence.
3 Add the vegetables to the ground beef and cook together, taste and add more salt if needed, pepper, or chili powder. Set aside
4 Cook the rice. When ready add chopped parsley, salt, and lemon to the rice then mix (this is optional but I love how it tastes)
5 Layer on a medium deep plate ground beef, half of shredded cheese, on top the rice, more shredded cheese (if the cheese doesn’t melt , just stick it  in the oven for 5 min) then sprinkle over chopped tomato and chopped green onion. You can add some little spoons of sour cream spread over it (as seen on the picture)
5 Serve with tortilla chips and ta-dah!, my husband smiles.
